Mexican Quinoa Bowl

  • 1 cup quinoa –
  • 1/2 cup canned black beans, rinsed
  • 1/4 cup onion, diced
  • 1/4 cup tomato, deseeded and diced
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon sea salt
  • 1/4 cup fresh coriander
  • 1/2 avocado, cubed

Rinse quinoa in water. Mix quinoa with 2 cups water and bring to the boil in a medium saucepan. Reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes. Fluff with a fork

Mix tomato and onion together, combine with quinoa, salt and spices. Top with coriander and avocado cubes.
